One of mine would be Kiefer Sutherland in Zookeeper. Reportedly, Sutherland had been cast in the film but was replaced with Nick Nolte in post-production.

I used to mistake Billy West (Ren and Stimpy, Futurama, and too many others to name) for all sorts of other people. Now that I've heard more of his work I can usually tell it's him, but he has the rather uncanny talent of sounding nothing at all like himself. In the episode of Batman:TAS where three kids each tell a story about their own version of Batman, Billy West was the voice of Robin in the Dick Sprang inspired segment, and you'd never know it. On Futurama, for a long time I thought Zap Brannigan's dialogue had been prerecorded by Phil Hartman before he was killed, and then I found out that West did all of it in a pretty flawless imitation. The man is incredible.
I seriously thought Athair in Sonic Underground was voiced by Sean Connery...it was Maurice La Marche doing a Sean Connery impression...
The Protomen enhanced my life.I thought it like Frank Welker, Casey Kasem voiced Shaggy the whole time until the new series hit with Matthew Lillard.
I had no idea it was Billy West who did the first DTV movie or Scott Menville did Shaggy Scooby Doo Get A Clue or the other random VA's who took over.
And I thought Dan Castanella was the second voice for Homer Simpson with the original voice dying or something,when in fact it was Dan the whole time.
I thought Casey Kasem voiced Shaggy in Scooby Doo Mystery Inc. Nope, that was Matthew Lillard. O _ O Casey apparently retired the role, and now Matthew's the new official voice. It had to happen- his voice was the only thing I enjoyed from the films!

Speaking of Scotts, at one point not too long ago Scott Innes was voicing Shaggy, Scooby-Doo, and Scrappy-Doo. I used to get his name confused with Scott Mc Neil though...
I wonder where Scott Innes went. His Shaggy and Scooby were quite good and a bright spot of the straight-to-video movies.
