Really, it's only the Iron Man and Thor movies that are really about cleaning up the messes daddy left behind. Which makes sense given the Daddy Issues Tony and Thor have.
Steve doesn't have Daddy Issues. He instead has displacement issues.

Disgusted, but not surprisedGuardians of the Galaxy only deals with the Daddy Issues in the second movie. And it's less cleaning up a mess left behind by dad as it is outright stopping evil dad. It also has the less evil dad trying his best to set things right and giving his life in the process. So again it's a case of a not so great dad cleaning up his own mess.
Infinity War has a bit of it, but the conflict is such that the issues are put on the backburner. They don't get revisited until Endgame.

Aside from the films already mentioned, there's also Iron Man 2 (Howard getting Anton deported led to Vanko wanting revenge), Black Panther (2018) (T'Chaka leaving Erik behind after killing his dad), The Incredible Hulk (if you want to count Ross for causing trouble for his daughter Betty), and arguably the Spider-Man films if you want to count Tony as Peter's father figure unintentionally creating his future villains.
There's a common observation that one of the reasons Thanos works great as "the ultimate MCU baddie" is that he's basically a overbearing parental figure on steroids who infantilizes everyone around him by acting like they're "children" and he is the only adult in the room (i.e the only one who knows how to save us).

Spider-Man also has Vulture who is a villain and a father.
They gave Proxima Midnight a Designated Girl Fight with not one but three female characters she had no rivalry or relationship with (the closest you have is Scarlet Witch basically avenging Proxima's attack on Vision earlier in the movie).
That said, I'm not sure how T'Challa would have beaten a guy who doesn't even need to touch him to kill him.

Though again, it's not in all of the MCU films. Steve's movies lack this theme, since his angst comes from not fitting in anywhere.
And it makes sense that the daddy issues crop up so much in the Avengers movies, considering how much they revolve around Tony Stark, who is Daddy Issues personified.

And if you're expanding beyond the MCU...there's a ton of them. Mother Gothel, Cruella De Vil, Madame Medusa, the Evil Queen, Maleficent, Ursula, Yzma, Zira...and those are just from Disney's animated movies!

One of the co main villains of Borderlands 3 is a girl.
I'd be hard pressed to call Ghost a Big Bad. She's kinda of more of a rogue agent whose single-minded determination gives her the impression of a mindless berserker.

I felt that line was just implying Thor was born during the latter part of Odin's life after he had his change of heart and that she was resentful he usurped her place, rather than anything about when it happened.
