He's capable of empathy, but he's also unusually capable of suppressing empathy.

If we'd seen Gamora's world actually having any sort of prosperity, then we could buy the survivors seeing it as some sort of saving. But no. Also, Drax doesn't seem to have suggested anything positive happened to count as "saving".
Incidentally, on repeat watch, Gamora's planet was actually more the Maw's mission. We didn't even see Thanos give a single order.
I wonder what order Thanos' army and "Children" came in. We know the Ebony Maw and the Chitauri came before Gamora, and Nebula was probably right after Gamora. But we don't know when he got the Outriders, or the Other, or Proxima, Corvus, or Cull. And outside of Gamora, does he just not consider any of them his (adoptive) children? Even Nebula it doesn't seem like it anymore.
I wouldn't say Thanos showing reluctance to kill Gamora says he has a heart. We have no idea what he likes about her, as Film Crit Hulk pointed out

For all we know, Thanos "values" Gamora in the same way a human values a pet. Or perhaps he's simply an Immortan Joe-style creep who thinks providing food and shelter entitles him to Gamora's servitude. A simple display of affection isn't inherently love. It can just as much be obsession or possessiveness.

So its a dark parallel to Yondu's joke in how Quill should be grateful that he stopped his crew from eating him & essentially how he raised Quill in general.
Of course the difference is that in the end Yondu died for Quill, Thanos had the opposite happen.

Likely an extended TV spot like we got with Black Panther.
The extended look for Iron Man 3 was one of the only good things about the movie.
That, and Can you dig it? A good song is a good song, even in a bad movie.
