This movie is like those romance flicks where they just get a shit-ton of celebrities to appear and the movie is just one big extended cameo for everyone they could get for the movie, except all of these actors are playing characters that have already been set up in previous films and it's a big crazy action film with what must be a record-smashing budget instead of a cheesy stand-alone romance film with no special effects.
I like that Thanos appears to just be trying to grab Steve to casually move him aside, but Steven fuckin' grabs Thanos' index and pinky finger and pushes with all his strength like his life depends on it. Meanwhile, Thanos is just mildly caught off-guard at the surprising strength this one Human has, as his hand is held back with all the strength in Steve's comparatively tiny body.
I was actually surprised when he apparently switched to using non-lethal rounds against HYDRA in Age Of Ultron.
Technological advancement can explain that. Killing people is significantly easier than subduing them. There are so many ways to kill a person, and much fewer options to safely, reliably incapacitate.
As arms technology goes, first you build a device to put a sharpened stick through a person's skull from 30 feet away. Then you start coming up with ways to, like, pad the stick or make it spray gas or something.
The physics behind less-lethal weapons are much more complex, because you have to figure out how to strike a safe middle ground between it being too weak to be effective and strong enough to be too effective. Whereas if you're building killing implements, there's no such thing as "too deadly".
That said, the shoulder-guns he uses in Age of Ultron do seem to be the same ones from Iron Man 1, so it might just be that he's retargeted them. Maybe he and Bruce were talking one day and Bruce was like, "You know, have you considered shooting people in the knees instead of the face? You can still die from that, but it's a lot less guaranteed."
