That could work, but I guess my thoughts are that they should write the Luke Cage series first and foremost as a Luke Cage show, and the Iron Fist show first and foremost as a Danny Rand show. Everything else is secondary to this, including facilitating crossovers.
Besides, the whole point of the Defenders is for all the MCU Netflix heroes to do an epic crossover, so it's not like the characters were ever in any danger of not crossing paths.

In my opinion, regardless of the ethnicity of the actor the character of Danny Rand needs to have strong ties to New York City. Which means it's probably best for him be a 3rd generation American at minimum, which in turn means he would of learned English as a child in the United States. That means he shouldn't speak English with a strong Chinese accent.
What the actor needs to be able to do is speak Chinese fluently without an American accent.
And honestly I don't care what the natural accent of any actor is if they can fake it well enough to fool someone who actually has that accent.
Also, it would be consistent with the approach that Marvel took with their mainline films, being that almost every member of the Avengers was built up in a prior film (black widows did not have her own movie, but was introduced in iron man 2). Hawkeye was the only Avenger to be introduced in that film proper.
Taking that into account, giving Iron Fist his own series before The Defenders would make sense.
