Claymore's not really worth watching, it's only worth reading. Although I suppose I may be interpreting your statement too literally.

- Aria
- Bleach - I just think of the Arrancar arc as its sophomore slump between the Subsitute/SS arc and the current one
- Jing: King of Bandits/Twilight Tales
- Muhyo & Roji's Bureau of Supernatural Investigation - shame its so overlooked
- Project ARMS - more like a good sci-fi than your standard fighting series, also Needs More Love
- Zombie Powder - I thought it showed a lot of promise

No "current" shounen is even close to as good as these IMO:
Yu Yu Hakusho is the best. I wish it had attained the fame of DBZ as it more richly deserves it. Just a perfect cast of characters and so many great fights.
Rurouni Knshin is also very good, sporting many interesting characters and a pretty good story.
Dragon Ball (that is, everything BEFORE the "lulz you're from outer space!" nonsense) is also good.

I think this goes to show how meaningless the term "shonen" is in describing a series. Although I have to admit usually people mean fighting series.
