From what you're describing, Vinland Saga would be your best bet.

If you're gonna do Kenshin, I'd say read the manga just because it continues after the anime and gets another awesome story arc.
Seconding everything Anarchy mentioned except for +C, but that because I haven't seen it yet. Ubel Blatt doesn't have an anime, so that one you have to read.
Shigurui is another one you might want to check out, if you don't mind lots of Gorn.
Samurai Champloo is another good one if you haven't seen it.
Also, this is more swords versus guns, so I don't know if you're interested, but for manga, check out Until Death do Us Part. It's a great read.
Edit: There's 2 guys besides the main character in Until Death do us part who uses a sword, but those fights don't last too long.
