Sure, the Hidden Palace scene used in Prime and the "how we met" scene used in Frontiers could've been swapped. But that's not really an answer to the question. The Frontiers scene shows Knuckles chuckling because they used the scene from S3's intro, and the most iconic parts of that scene are Knuckles chuckling, and Knuckles punching the Super out of Sonic.

I showed her the six Sonic Mania Adventures shorts and then as she was asking for more we watched the two live action movies and she really enjoyed them, quite a bit! She's really looking forward to the third film next year. I was happy to discover that the films are better on rewatch now that I know to expect my grievances and put them to one side.
Knuckles is her stand out favourite character at this point, but is keen to see more of Amy Rose.
I wish more of sonic prime was out as that seems to have a great grip on the characters, but feels very incomplete at just eight episodes.
I might show her the more recent twitter take overs for how hillarious they are, but gosh those things can go really deep into continuity.
She's not interested in the games however as she just doesn't deal well with platformers. Which leaves me short of games to show her, unless Sonic Battle and Sonic Chronicles get a port (very unlikely).
You can show her the IDW comics if she's not interested in the games as they're basically the next best thing.
There's also Sonic X which is now currently on Netflix, albeit just the first two seasons.

I'm of the opinion that Sonic-X is, not very good at all. The writing is all over the place with idiot balls used regularly, the animation looks good in stills but struggles in most action scenes, the dub looses a lot of the humour and I just don't care for Chris and his family.
I also feel like Tails doesn't get a very good showing in that cartoon.
Edit: I'm trying to think of good episodes and arcs from that show and I think Emerl has a really good two partner?

I personally think the OVA is underated. I like their weird setting where the human world is destroyed beneath the clouds and they all live above on islands.
It's also a really good showing for Metal Sonic. (As is the Mania shorts)

Sonic X sucks balls, but even twenty years later it still pretty accurately represents the game series. The characterization and writing is pretty questionable, but it has its moments.
I'd say just stick with the Sonic Adventure adaptations and then just go straight into Season 3. Maybe watch a few first Season episodes to get acquainted with the setting and whatnot. But it's mostly slice of life fluff. But Sonic fans love seeing the cast in more domestic settings, so it might be more up her alley. Especially if she's a fan of Amy; she's pretty abrasive, but it's also a Shipping goldmine if you like Sonamy (and Knuckles/Rouge to a lesser extent).
You could show her SATAM, or AOSTH but those are even more far more removed from what Sonic is than the OVA and you'd basically have to have grown up in that era to really appreciate them.
