-before moving around, and taking care of the other with a few brutal stabs to the back-

There is only so much you can take from a kill.
Before the curse of the undead sets in- and revives them to where they last rested.
I already had the humanity from them. I just kept hunting them to keep my skills at least a little honed.
As well as make sure that these hollows don't cause anyone else any problems.
