Technically, Marvel's Infinity Comics (and their predecessors, Infinite Comics) are webcomics, not comic books, but it's fine to talk about their Spider-Man stories here.
Discussions that are only about Spider-Man adaptations in other media (films, video games etc.) are off-topic, but discussing the differences between the adaptations and the original comics is fine - as long as spoilers for the adaptations are tagged.

SO. Regarding "does the symbiote corrupt people or is it the other way around," my headcanon has always been that the answer is "it's neither." Symbiotes feed off of certain neurotransmitters, with adrenaline and phenethylamine being the ones brought up the most. So to me, the idea is that they amplify their hosts' emotions in order to produce more of the chemicals they crave, adrenaline in particular being their go-to- hence the increase in impulsive, aggressive behavior. But hosts can learn to communicate with their symbiotes in certain cases* and work out a deal to provide them with a source of food without having their emotions meddled with. This one's more of a theory than a headcanon, as I feel it doesn't contradict anything canon.
However, going into more headcanon-y territory, I've toyed around with the idea of symbiotes picking up the personalities of their hosts, with the most influential usually being their first host's personality.
And now into the outright fanfiction territory: I'm working on a fanfic that has, at the moment, 5 examples of different host-symbiote relationships. Mutual agreement/coexistence, personality merge, and personality dominance are the main 3 types, but the former has a number of variations depending on how the host and the symbiote see eachother and what the symbiote's personality is like.

The idea of Symbiotes taking on their host's personality is something I've wondered about.
I think it's canon the Carnage symbiote was a new born and Cletus was the only thing it had for any model of personality.
Not sure what Carnage the Symbiote is like these days.

I agree with all of these.
Though I believe the comics actually dropped this pretty quickly? If not for ITSV it may have been forgotten completely
Really the comics can't decide if Earth 65 Gwen is her own character or an off shoot of 616 Gwen Stacy.
As on paper 65!Gwen is a young rebellious tomboy punk rock girl that would pick fights to defend her nerdy friend Peter before he became the Lizard.
Compared to 616!Gwen who was the quintessential girl next door though she started as the alpha bitch to Peter before warming up to him...but never Spider-Man who she had an irrational hatred of. The reverse Felicia situation
But variant covers featuring the original Gwen keep making reference to her alt universe self
Most recently this Dark What if of 616 becoming Spider-Gwen in response to Peter dying.
This blurring of the lines makes it awkward that Miles is basically dating Peter's dead ex.
Plus again let's not beat around the bush another big reason there is pushback to Miles and Gwen dating.....

Miles/Gwen is pretty much one of the last questionable shit we got stuck with cause of Bendis
Which thankfully it hasn't been a thing since he left but it does pop up in minor degrees, like how Miles is on the Ghost-Spider first issue cover despite logically being pretty low on the totem pole of important things in Gwen's life.
Sadly though the movie brought it back for an inexplicable reason and cause of it's success we're stuck with it. Which is saying something cause I generally love everything about Spider-Verse but the Miles/Gwen ship always annoyed the Hell put of me.

I put Silk under "completely enamored with him" while citing a better interpretation of her character and dynamic with Peter in Spider-Man Fake Red.
