I'll be honest with you. Getting your Galgastani Chaos Frame back to acceptable levels sounds like bitter work.
There are two methods. One involves lots of fighting and the other involves cheesing certain story choices(this one seems to be the easier of the two).

If you want to check your Chaos Frame for the Galgastani, recruit a Galgastani unit from a shop(somewhere like Coritanae Keep would be a good place to find them) and check their Loyalty. The initial Loyalty of a shop recruited unit is equivalent to their Clan's Chaos Frame.

Umbran Climax◊I went along the chaos route last time I played. I never finished it — not because it's bad, but because my PSP is old and crap and turns off at random. After I get a replacement PSP and play it again, I might tackle the lawful route. Variety, you know.

Each death raised my approval rating by a tenth of a point, which means I gained a point per battle. My rate was initially really down. "This unit often speaks with distaste about your decisions" and so on. I think it took me 30+ battles. Ah, well, unique class and all that jazz.
Beat Sherri. Darn, keeping her alive was annoying. I'm grinding Hobyrim and Cressida now.

I have to ask, can you unequip a weapon skill after you've mastered it? Denam is a ninja and his katana skills are maxed. If I remove it from my skill list, do I lose anything?

It should stay at whatever level it's on.
Having weapon and affinity skills revert after you unequip them would be pretty sadistic.

Do I have to do something with the dragons to recruit Deneb, or is selling them as soon as I get them and buying the gems enough?

You need either 5 or 9 gems for each dragon(I believe each dragon creates 2 gems in her shop), but that's cake compared to unlocking her special class.
To do that, you need to find 30 glass pumpkins before getting all the gems(it's okay to sell all dragons first though, so long as you don't buy all the gems just yet though).

Or is it Ocionne? I've heard she's only available in the Law path...:/

It's not a big spoiler, but you need Jeunan to recruit her. Oh, and one thing about Jeunan; there was an error with the writing of the dialogue choice to recruit him. Both answers seem like the same thing. Just remember to pick the second answer.

Winning the battle gives you a scene where you can recruit Catiua. I deliberately chose the wrong option and...she decides to kill herself. You know, I really don't like her. But I'm gonna recruit her anyway.

She also makes it ridiculously easy for others to manipulate her and fell right into Lanselot's trap. And she's really...obssessive over Denam.
