On the size of the fleet, Star Fleet went through a ton of militarization after the Borg and Dominion wars, and from how they're acting probably haven't stopped. But they aren't fighting the Dominion anymore, which was keeping a ton of ships busy in DS9. So it makes sense to me they'd have a lot more ships available at this point.

But then that flies in the face of the Federation being stretched so thin they couldn't evacuate Romulus nor can they police their territory efficiently, requiring independent groups like the Rangers (Which 7 outright says are picking up Starfleet's slack).
You can't have it both ways where Starfleet has 200+ ships ready to go at the drop of a hat AND they are stretched thin.

They made mention that the evacuation force was only made up of unarmed ships, Romulan Xenophobia was an issue if suddenly a thousand armed ships showed up in the middle of their own space.
We see the shot of Mars in Short Treks and they have two 200 year old Magee class in dock, I would assume be rushed back into service. (an obvious budget saver but one that makes sense.)
There is some minor variations to the ships but generally they are all the same.
The biggest waste, there is such a wealth of ship designs... even DS 9 did it better 20 years ago.
I'm pretty sure they came there with the express goal of warding off the Romulans through raw force of arms.
Though they didn't count on just how devoted the Zhat Vash were to this mission. I'm genuinely surprised she didn't still try to bombard the planet just as a final insurance that one of the synths didn't change their minds one day.
One Strip! One Strip! Here's my review of Season One: http://unitedfederationofcharles.blogspot.com/2020/04/star-trek-picard-season-one-review.html
Although it's just being announced now, Gene Dynarski
passed away in February. He's one of the few actors to appear in Trek again after being in TOS. He played Childress in "Mudd's Women", Krodak in "The Mark of Gideon", and Commander Quinteros in TNG's "11001001".

Why are they so focused on the TOS era? Sure, there's Picard, but this still makes 2 of 3 CBS Trek shows set in the time of TOS. I know there are still a lot of people who remember a time when TOS was the only Trek and still have a special place in their heart for it, but to me it seems like there's more potential with a show set in the Picard era or later.
They weren't originally. Discovery’s S2 ending was specifically getting away from TOS, they moved just far enough to pass the era Danials was from.
Pike was such a hit though people wanted more, Thus we are getting more.
I admit to being one of those people, the only good things about DIS S2 were Pike and Tilly and we are getting more Pike
. Tbh DIS S3 has held very little interest for me without Pike.
The animated series Star Trek: Lower Decks premieres on CBS All Access August 6th
. There will be 10 episodes, released one per week.

Patrick Stewart seems to not age. Guess he got old young and just didn't change.
Wake me up at your own risk.
