Mass Effect 2 had great music. It had a great blend of orchestral and electronic music, and is incredibly memorable.
Morrowind and Oblivion had some awesome music as well, but there were certain parts that I didn't like. Morrowind's was too peaceful and not personal enough, and Oblivion's music just didn't evoke the feeling of a Daedric invasion. Just judging from the main theme in the trailer, Skyrim sounds like it will be a lot more personal, gritty and dark - reflecting the game's overall Nordic sword-and-sorcery atmosphere.
Dragon Age: Origins showed us that Inon Zur is a master at what he does. Unfortunately, there were places where it felt inappropriate (Leliana's song, anyone?) and occasionally not intense enough. The "adventure and heroism" leitmotif that appears in the main theme and the Battle of Ostagar is totally epic, but it wasn't visited enough to make me feel like it was my character's theme. It left me unfulfilled.
Golden Sun had a great soundtrack. If you gave the composer a full orchestra and choir, then you'd have one of the best soundtracks out there.
Out of all of these, though, I have to say that Marty O'Donnell and Michael Salvatori did the best soundtrack for a game when they composed the Halo soundtrack.
In the same place I was that one time, all the timeThe Fifa games always have a great soundtrack... Song 2 by Blur only went to such mainstream success because of Fifa 99. The games always have a good mix of alternate and indie to suit your style, bit worried about the newer games though, music quality's not as good as it used to...
Yes I'm Irish. Yes I'm ginger. No, I don't have your gold.

personally, I am parcial to the sountrack of Batman Arkham Asylum. I hope they keep the themes for the sequel
