Most middle-evolution Pokemon, especially the starters, suffer from Middle Child Syndrome, but Brawl at least helped give Ivysaur a name for itself.
Obviously, Pikachu and Jigglypuff don't count because they were Smash characters before they became middle evolutions.

... I tried a For Fun Free For All today for a test: Do not initiate combat when the match starts.
The whole match, I just watched as all three of my "opponents" were just dilly dallying around, taunting, jumping, rolling, grabbing without throws or pummels and not doing anything.
The match was about to go to sudden death, Smash Ball appears, I say "fuck this" and let Player 4 really feel the Monado's power and ended that farce.
Conclusion: there seems to be some strange community mindset of "Nobody fight! First one to fight is everyone's enemy!" going on.
I don't get it... What is the point of just sitting there for two minutes, waiting for sudden death and seeing who the RN Gesus Bob-Ombs spare?
Moved handles because mehI'm sure it's just their own idea of "fun" but since it is the Wii U version, adding each other as friends shouldn't be difficult.
If they want to play "who can survive bob-omb rain" then they should do it in their own friend room.
But yeah, it's annoying when I just want to actually play Smash, not a waiting game.
And if I want 3 figthers trying to buttfuck me with friendly fire on, then I'd play classic mode.

I went through the same kind of predicament you did in my experiences with For Fun, and if there's anything to learn from playing that mode, it's that you, well, don't fight.
I talked about the difficulties I had with fighting my opponents when it was basically myself against three other people, and it seemed like they were specifically conspiring against me. Well, I picked up the mode yesterday, and turns out, you don't even get to do the thing you're supposed to be doing in a game like Smash.
I'll admit, though, when online wasn't crapping on me with lag, I actually had kind of a blast with For Fun (no pun intended; many of our matches ended with Sudden Deaths). It gives me a chance to relax and unwind from multiple 1-on-1s, especially with dash grab-happy Captain Falcons and spamtastic Mewtwo who just roll and Shadow Ball by the edge. I've even entered several tags indicating what character I was going to play as (e.g., "MURICA" for Mario's NES Open Tournament Golf alt). Plus, I get to do some pretty silly stuff like help my opponents play Duck Hunt or destroy everything in sight in Luigi's Mansion and Skyworld.

I've only had one For Glory Smash match, but in that match my opponents and I actually fought each other. Since the FF and FG environments are very different from one another, I'd say yes.
You guys are crazy; doing sod-all is extremely fun. That's one of my favorite things to do in For Fun. Specifically I love just playing as Dedede and laying on the ground looking smug, occasionally eating things.
It's a great coping mechanism for dealing with being salty. Like, if I'm getting mad at how terrible I am at the game, I can just start goofing off, not even try to win. I replace taking the game too seriously with not taking it seriously at all — good stress relief.
I do feel bad whenever there's that one person who keeps trying to fight and the other two keep fighting just that person and I'm just over here, eating any items that show up near me. But I try not to personally fight back at these times, and sometimes I'll start beating up on my "allies" for ganging up on someone when what they should be doing is throwing projectiles for me to eat.
I really enjoy eating things as Dedede, if you couldn't tell.

There's a possibility that IC's would not work under 8-Player Smash. We don't know. It's not anywhere near implied that they wouldn't work on that mode, so it's a moot point. IMO, I think they would not, but eh.
Anyway, I would totally pay for Pichu. He's one of my favorite Melee characters, and he would be much more useful thanks to the Rage Mechanic. He's still a joke character with his normal damage gimmick, but would be a lethal one in Smash 4, which is enough for me to want him back. Also, since clones are easy to do and Roy is very likely coming back, I could see Pichu being remade. Hopefully they'll make it so only electric attacks damage himself, not just strong or special attacks in general. I think that kind of missed the point. That bit of accurate use of his effect would also mean you have powerful finishing moves that didn't damage you, which gives a strategic use of his moveset.
