Amusingly, the only time I can recall him only using magic in a fight was as Ganon, in the original game. So, yes, you could say that he's used magic in more game than he's fought you physically. It's just that it's not a very large majority.
In fact, every time Ganondorf is fought, he uses a combination of magical attacks and some mountain-shattering physical strength.
Well, except for Wind Waker. That was just a straight-up sword fight. Kind of like how Twilight Princess was the only time Ganon was only a physical fighter. Shadow portals aside.

All the same, the dark magic is a much more universal aspect of his character. He's sometimes a rawly powerful unarmed fighter but always a powerful mage.
