The Metroid II manual, though it was unclear if 6'3 189 Lbs referred to Samus in or outside of her suit. (Either she was a very tall woman, or the power suit was made of paper mache). The Super Metroid guide book established those figures referred to her outside of the suit (tall woman).
But let's be honest here. The Metroid series has never been the best with continuity. The first game's manual described Metroids has harmless if left alone while the game themself clearly described them as invaders (though what they invaded was not entirely clear). The third game then just changed them into incredibly dangerous parasites that needed to be eradicated.

Buldogue's lawyerEh, the only Chozo we encountered were disembodied "ghosts", but 6'3 189 lbs is not inconceivable. (Compared to say, the 6'9 240 Isis) but she would probably have more defined or larger muscle groups than her zero suit depiction often suggest (it is a in the normal BMI range, it is just her legs and waist that are too slim to be believable, so I chalk that up to writers cannot do math/artists are not architects. Interestingly, the original Fusion concept art would have given her biceps bigger than her waist
◊, do not ask me to try and guess what anyone with that absurd comic book build would weight in real life, which means her slimmer appearance may have been over compensation.
