Assuming the tutorial books are canon, Scratch Cat is only referred to as Scratchy.

on the Discussion Forums, the tutorial books weren't made by the Scratch Team, and as a result, most of use refer to the cat as “Scratch Cat” instead of “Scratchy.” Also, the Scratch Wiki doesn't mention "Scratchy" anywhere.
