His armor and natural resistance to magic and telekinetic attacks made him immune to force choking. A cyborg like Vader also had few options in defending himself against Doom's electrical attacks and his ability to magically manipulate technology.
99* DealWithTheDevil: Doom's mother accidently sold her soul to the devil, and he made it his top priortity to rescue her from her damned fate in the afterlife.
100* DeflectorShields: One of his armor's abilities, he uses a force field to deflect the bits of a destroyed TIE Fighter thrown at him by Darth Vader.

104* DownerEnding: With Vader's death creating a power vacuum, Doom took over as a general of the former Galactic Empirical Army. With this, Doom now has reign over the stormtroopers and most likely their spaceships along with his already established reign over Latveria.
105* EvenBadMenLoveTheirMamas: He's bound and determined to rescue his mother from the pits of hell. It was main purpose in life for years until he finally accomplished it.
106* EvilGloating: When he knocks Vader into the volcano seemingly to his doom, he boasts that Vader "has no hope" and belts out an EvilLaugh...completely missing that Vader's lightsaber is coming back around before stabbing him InTheBack, causing him to tumble inside after Vader.

His determination to resurrect his beloved mother, the sheer genius and indomitable arrogance led to him not only becoming one of the smartest and most dangerous supervillains in the Marvel Universe but usurp the political leadership of Latveria and modernize it while simultaneously crowning himself king.

While his ego does show up in the fight at multiple points and leaves him vulnerable to Vader's attacks, it doesn't stop him from taking the win anyways.
127* PoweredArmor: Doom built a suit of magically-augmented powered armor that he uses to intimidate and overwhelm his enemies. It has let him survive attacks from Thanos and the Silver Surfer meaning that Vader's Force powers couldn't hope to do a thing to him.
128* PsychicBlockDefense: As the analysis mentioned, his willpower is strong enough to beat the Purple Man's telepathy. This was one of several factors for Doom's win. Even if Vader could get past the armor, he would still have trouble using his Force-powered mind reading and mental manipulations on Doom.

''DK: King of Swing'' allows him to become invincible whenever he wants at the cost of 20 bananas.
