Hiyoko didn't say she's a 'Shint Buddhist', she said she's a 'Shin Buddhist'. Shin Buddhism, AKA Jōdo Shinshū, is a real branch of Buddhism and the most commonplace one in real-life Japan. There's also noting noteworthy about celebrating both Tanabata and Christmas. Especially when both are celebrated in such a casual, secular way. Anghel's bizarre cosmology would be the only thing that could remotely fit the trope but it's probably used to parody Rule of Cool-based JRPG kitchen-sink worldbuilding - rather to indicate new merged religion in the post-apocalyptic future.
Deleted line(s) 60 (click to see context) :
* CocaPepsiInc: A religious example. Hiyoko mentions that she comes from "Shint Buddhist" family. Both Tanabata and Christmas are celebrated in this universe. Anghel mentions reincarnation in his ramblings, but his human portrait also has crosses (a symbol of Christianity, a religion, which has nothing to do with reincarnation) and his name means "Angel" -angels belong to Abrahamic religions, not to Dharmic ones.

In response to this, the humans developed a counter-virus in an attempt to kill the birds that carried the disease. However, this new virus ended up giving the birds it infected human-like intelligence rather than killing them, leading to them becoming the dominant creatures on Earth as more and more humans died from the bird flu. The surviving humans, who developed a resistance to the disease, are forced to live apart from civilisation as hunter-gatherers.
