Angel's soul is not the same soul he had as Liam. This is why Angel appears to show a greater sense of morality, self reflection and guilt as Angel, than he did as Liam. Which would explain why Liam and Angelus are more similar than Liam and Angel. The gypsy curse says he is cursed with "a soul," so it could be any soul. Spike, on the contrary, gets his original soul back, because he asks to be returned/restored to the way he was. This could explain why, Spike's character doesn't change as drastically from being William to being ensouled Spike.
