Another example: in Shanghai the local dialect is missing a sound that exists in Mandarin; locals will often drop this sound from their spoken Mandarin, thus conflating some sounds.

Which sound is missing, exactly?

Removed "the most famous is Japanese." because Japanese is not even close to a dialect of Chinese, it comes from an entirely different language family and has nothing in common with any form of the Chinese language whatsoever. They use the same set of characters, but as a spoken language the two are not connected in any way.

"They use the same set of characters, but as a spoken language the two are not connected in any way." This is not entirely true, either. Yes, they are different languages from different families, but Japanese owes about 50% of its vocabulary to Chinese, which includes using two sets of numbering, one of which is Chinese. To say that there is no connection is as silly as saying English has no connection with Latin just because one language is Germanic and the other Roman.
