Is it still this trope if someone is a huge fan of something else and can't take criticism of the thing or person they're a fan of?

Yes, but that's the sort of thing that leads to edit war, right? I mean, sometime someone might end up adding a person who doesn't really fit the definition just because of a perceived slight, and if the person is a troper and takes offense, things escalate. That's one of the reasons why the Rule of Cautious Editing Judgment exists. It's not like everyone's an easy target like Amy's Baking Company or CWC.
