Even though they're called dragons wouldn't the statues in the Farseer trilogy be more accurately called Golems?

Kind of. The stone dragons aren't really golems in the traditional sense because they still have some form of consciousness in them. But replace the animating word of a golem with the lives and memories of the people who carve the dragons and they're pretty similar.
