Personally, I like the Eva OP as well as the Haruhi and Lucky Star ones.

The Yumekui Merry, second The Melancholy Of Haruhi Suzumiya, and first Blue Exorcist O Ps are three of the best I've heard. The Kekkaishi OP is pretty far back, but incredibly catchy. ED-wise, my favorites are the first Shakugan No Shana and Astarotte No Omocha.
