I feel like there's gotta be something better than just a sprite of the series' protagonist.

I think the first cover is sufficient; it's certainly better than the current.

When dealing with a series like this, is it generally best to just use a picture of the first installment?

It's generally best to use the most representative image for the series or franchise. The first installment is often a good pick, but it depends entirely on what suggestions show up. What's generally best is if there's some official franchise art for it that isn't specific to one installment.

Bump. I am working on a Characters page for this series. I'd like to move this page's current image there for the protagonist's entry, if no one minds.

I'd say that the value of choosing screenshots of gameplay over box art seems to follow from Show, Don't Tell.

As for screenshots of title screens... I'd say they're more of a grey area.
