I've seen fan-art shipping Korra with Gumby, as well as art showing Elsa in a relationship with Larry the Cucumber before cheating on him with Shrek.

I don't have any memories at the moment of crossovers that were all that shocking, but I did use to watch Toucan LDM's "[X] meets My Little Pony" and I found them rather hilarious back in the day. If you pay attention closely to the videos, there's usually a call back to a previous crossover animation of theirs, which implies there was some sort of continuity going on.
The most memorable one in my opinion was where Godzilla came to Ponyville and Spike went into his giant dragon form to take him down. Their monstrous screams were translated via subtitle, and after Spike announced to Godzilla that he was gonna beat him up, Godzilla replied "BRING IT ON BARNEY!"
Call my humour lame if you want but that was only one of the most hilarious moments of that crossover xD (to me anyway)
Recently, I came across a two-part episode of a little-known Disney Channel series called The Jersey which was not only its Grand Finale, but also a Fully Absorbed Finale for So Weird.
In that particular two-parter, Morgan Hudson is a fan of So Weird and one day decides to watch an episode of it, but is shocked and upset to find out that Cara diLizia, who plays Fi, isn't on show anymore. Thus, when Morgan along with her brother Nick and friends Coleman and Elliot go to meet the So Weird cast a local convention, she demands what happened to Fi Phillips, to which Replacement Scrappy Alexz Johnson replies by explaining that Cara was fired in favor of her. And so, Morgan and Nick decide to save Fi's father themselves by going into the world of So Weird using the magic jersey... and Hilarity Ensues.
I could go on any further, but that's too much for me to post here. However, in the end, the Hudsons' efforts to save Fi's father turns out to be All for Nothing, forcing them to go back to their own dimension, where they rescue their friends and family from a burning warehouse. At the end of part two, Cara diLizia herself visits the Hudson household, and explains that she wasn't fired from So Weird, but instead wanted to "move on". Then, of course, she manages to return their jersey that they lost in the fire, having picked it up from the ground still intact.
And this wasn't the only crossover that The Jersey had; they previously had one during its first season where the magic jersey gets sucked into the world of Archie's Weird Mysteries... and accidentally transports the Archies into the real world.
A couple memorably odd fanfic ones:
-Marvel and My Little Pony. Specifically Tony Stark/Steve Rogers and Applejack. Weird and kinda triggering in a few ways, but it works surprisingly well.
-Swedish Chef from “The Muppets” and Gordon Ramsay. And porn, no less.
-An Anthony Bourdain “No Reservations” episode set in Narnia. One of the best fanfics I’ve ever read, too.
-A romantic antagonists-to-sweethearts fic pairing Mayhem from Allstate and Flo from Progressive. It’s charming and wonderful.
While maybe not the weirdest, for sheer ambition I have to give a shout-out to a youtube project called Star Wars: The Dark Knight Rises. It's a series of three videos ranging from about 45 minutes to an hour and 15 minutes that reimagines the events of the original Star Wars film trilogy, and gives many main characters voices from various Batman properties, (for example, Vader's dialog is all Bane from The Dark Knight Rises, Obi-Wan Kenobi is mostly Michael Caine's version of Alfred, along with a few other of Caine's roles, the Emperor is Mark Hamill's voice acting of The Joker, etc.) but it also includes voices from many other sources (Boba Fett's lines are Dark Helmet from Spaceballs, C3PO's lines are Johnny Five from Short Circuit, etc.) as well characters and properties from various other, mostly sci-fi franchises, such as Star Trek, Firefly, and more.
It starts out a little rough and simple, but it gets better and adds more and more crossover elements (even if many of them are little more than cameos), as time goes on. As an example of what to expect, here's a small clip where Lone Star from Spaceballs giving the Independence Day speech from Independence Day to rally the Rebels and their potential allies just before the assault on the second Death Star. Also, for something much quicker and easier, this is probably the best Batman vs Superman creation that I've ever seen, especially if you're a fan of old-school rap. Batman vs Superman: Mama Said Knock You Out

i can't believe nor even fathom that he visited his friend! the audacity!So I came across an Animal Crossing and Mary Poppins crossover I wrote back in February. I kid you not.
In hindsight, it was more than a bit cringeworthy that I wrote it, but at the time I think it all seemed quite normal.
