I like the idea of self-demonstration; it seems stronger to me than an image that simply repeats the trope name or some equivalent of it.
A trope picture should be a quick illustration of the trope, not some unrelated joke.
I like the Astérix one too, although it's also an example of At Arm's Length, so maybe possible trope interference....
Self-demonstration, by definition, is not "unrelated." It's just another way of illustrating the trope, and the idea would certainly have more humor value than a couple talking heads (which is almost certainly what you would get with any other image, since this seems to be toeing the line between Stock Phrase and trope).
But the Self-Demonstrating suggestion isn't really the trope. This isn't just "a person claiming to be someone they're obviously not", but "A form of sarcastic rejoinder, responding to an improbable statement with an even more impossible statement."
Having a picture of Mickey + caption saying he's the Queen of Sheba alludes to the first definition, but it's not obviously responding to anything.
You're reading that incorrectly. The trope is a form of sarcastic rejoinder, but that doesn't mean that all sarcastic rejoinder is this trope. The examples show that the trope is, indeed, claiming to be someone you're not Played For Sarcasm.

Absent-minded professor and Neverwinter Nights DMI'd vote for Asterix. The Pony one is okay-ish, but aside from the fact that I think that Asterix one is funnier, the Pony one might not reduce down to 350 pixels wide very well.

The text is just about readable, though not great, but what the heck is actually going on in the scene is distractingly hard to work out.

I'm guessing it's because the larger image is a png but the smaller image is a jpg.
Exactly. Reduced to 25 KB at that too, which will really do it. The quality loss is significant. Which is why I crusade against jpges. Please avoid them if you can.
