I wonder, could Marvel Studios legally get away with introducing Juggernaut into the MCU by using his original, non-mutant origin (w/ the magical gem)?

Not really, because he is so tied to the X-Men. They can get away with Scarlet Witch and Quicksilver because they have strong ties to the Avengers and the X-Men, but Juggernaut doesn't have any ties to the Avengers really.
Now ask if Marvel can introduce Mystique into the MCU, since she has strong ties to Carol Danvers. Or if Fox can introduce Carol Danvers since she has strong ties to the X-Men.

Aw, that's a shame. I think it would make more sense than Carol Danvers being shared between franchises. True, she has a history with Rogue, Mystique, and what-not. But then again, you have Wolverine as an Avengers member and one of Cap's old war buddies, and Xavier hanging with the Illuminati, yet that would still be pushing it when it comes to sharing between franchises because of the mutant designation in 616, a term which Fox has a legal claim on. Juggernaut on the other hand is a technicality.

Didn't Sabretooth start out as an Iron Fist villain?
He did, but he wasn't as connected to Iron Fist as Mystique was to Carol Danvers. Mystique was basically Ms. Marvel's nemesis in her first series, before they both moved over to Uncanny X-Men.
The Inhumans debuted in Fantastic Four and spent most of their career tied to the FF, yet their film rights belong to Marvel. And despite Kang first appearing as Rama Tut in FF, his most famous persona debuted in Avengers and he's spent most of his career as an Avengers villain, one of their main foes. Yet FOX holds the film rights for any version of Kang.
These things are plain weird.

Sony didn't give up the rights to Spider-Man, though. They still have the rights, they are just sharing them with Marvel and are going to co-produce the next Spider-Man movie.
Fox will...probably not do that.

I know it's a long run but does anybody think Fox might cross over with Marvel one day? Not necessarily a shifting of any rights, but a partnership for one film. Avengers, the X-Men and maybe the FF thrown in there if they ever get that off the ground successfully. That would certainly be a headline but I don't know how the story would work.
I wouldn't expect anything of the like at any point in the near future. Especially not as long as Marvel and Fox are still so strongly at odds over the F4 situation.
We don't know that they are at odds. That's all rumors. What we do know is that they are collaborating on making two X-Men TV shows.
Story-wise, their best option would be a multi dimensional crossover instead of trying to set both sides in the same universe. Maybe a loose adaptation of Secret Wars.
A population of mutants try to go into hiding by using mutant powers to access a universe where mutants do not exist, and not feared nor hated.
Though, if I was a mutant (my power would be that I could control anything which is me) it would be a hard question about whether I want to live in the MCU or the current FoX-men universe.
One has alien invasions on a yearly basis, and a looming threat of total destruction but no paranoia to avoid, but the other has a possible future with Death Camps and public association of mutants with terrorists (Thanks Magneto!) but, only has a catastrophic event every decade or so.
FoX-men universe would require me to live in the nineties though, so probably MCU.
