I'm not a Nasuverse lore expert or anything, but the impression I got was that the Grail goo that burnt down the town did more than just cause a fire that killed his parents, it caused him to experience an almost literal Hell in a way that a normal fire wouldn't have. So Shirou basically had his mind broken by the Grail as a kid.
He's more or less lived the rest of his life feeling like an empty shell pretending to be human.

It's just that the fire destroyed everything he was and everything he had. It left him completely empty until he latched onto the idea that saving people makes you happy and then singlemindedly pursued that goal because he had nothing else. He's has nothing (or feels that way) without his desire to save people. Whenever he tries to pursue any normal happiness, he feels terrible guilt and withdraws. He places no value on himself because he just considers himself another tool to be used in the pursuit of his ideals. Any suffering he feels isn't even a hardship to be worked through but almost completely irrelevant to him.
The thing is, though, he isn't empty inside like he thinks, so his ideal will eventually cause him to break down because he isn't acting like an actual human being. He isn't even working towards what he wants, not really. What he actually wants is for people around him to be safe and happy and the happiness of saving people, but he doesn't know why Kiritsugu was happy to have saved him and his actual methods towards fulfilling his ideals contrast with what he actually wants.
Shirou is fundamentally contradictory and broken. The best you can really say about his mental state is that he's functional in society and useful to others.
He is, as they say, the Bone of his Sword.

Though the theater I watched it in had kind of crappy speakers, so I wasn't able to appreciate the music/sound effects as much.

How was your audience and how did you like it? My theater had good turnout and reaction was pretty good. Thankfully not too obnoxious during it, laughing and cheering appropriately except for one jackass whooping when Saber Alter showed.
We had a couple dozen people show up. They were mostly quiet... except for two scenes: Shinji's face after Rider is whalloped, and Kotomine munching on mapo tofu. Those drew some extended chuckles from the crowd (especially Kotomine).

but HOW?I need to go and rewatch Type-Moon's Fate anime. All I really remember from it is the "People die when they are killed!" meme. I forgot the opening was nice. I feel like I've heard the second opening on a bunch of different amateur Youtube and Newgrounds animations though.
UBW's first opening, Ideal White, is kind of meh, generic J-pop.
And Brave Shine dumps all over it. I don't know if any other opening beats it. Gives you that same rush Parasyte, Fullmetal Alchemist, and Attack on Titan's do. Feels like I'm about to watch an epic battle between mages with far more personal stakes than initially revealed. I'll never get tired of watching Berserker carry Illia on shoulder, charging at Gilgamesh.
Now I'm curious what Fate/Zero's is.
If I give this anime another shot, what order should I go on?
Fate/Zero, Type-Moon FSN, UBW film, and then whatever the new one was, and then the Apocrypha anime?
It occurs to me that my excuse of not playing the visual novels because of not having a decent PC doesn't work anymore, and the visual novels probably aren't as graphically taxing as Fallout 4 or Saints Row. I should probably buy them cheap on Steam okay they're not there?

Anyway Apocrypha and Extra are both stories set in different timelines, so there really isnt an order to watch those in. Also the Heaven's Feel movies arent finished yet.
You can find Zero and UBW on Netflix. don't bother watching the original anime or the UBW movie though, it genuinely isnt good and the anime does everything the movie does but better.

So Fate/Zero, UBW anime, Heaven's Feel movies when they're done. That's the "best" way to watch this series.
I watched the UBW anime and didn't care for it, but I breezed through it so maybe a rewatch would help. I feel like a condensed, film version might be more enjoyable.
Apocrypha is a different timeline. Good. I kept seeing it in my Netflix queue and I was like, "good god, now I have to figure out when this takes place and if I should watch it first."

Don't blame you for getting confused, the Fate series is a collosal clusterfuck with Zero, as far as I'm aware being the only one everyone can agree is at least good.
Shiro, yeah he's fucked, but from what I've seen of Sakura's life she's had to endure hell nearly everyday. Shiro's hell, if he has one, is mostly self imposed.
PS: Has Saber actually ever won an argument against anyone other than Shiro?

I'm not saying that's the only thing wrong with him, I'm saying that he's had significantly less trauma over his life. Anything else wrong with him is because he's really wierd.
Also, independant of anything else Sakura is just personality wise a terrible match. He's the sort of person who tries to hard to do everything and she's too passive. Their relationship would inevitably end up toxic.
