Final Fantasies V and VI come to mind. We got III DS, and fifty versions of IV, and more voiceacted Gilgamesh and Kefka cannot be a bad thing.
Secret Of Mana as well, if only to give Square a chance to do the game like they intended to, before all the fallout following the death of the Nintendo Play Station happened.

Of course you cant say "Final Fantasy remake" without mentioning the obvious.
Though personally, (seeing as we are already getting FFX HD) I'd love to see a remake of Final Fantasy IX.

Also, i'd like to see Deus Ex, with an HD treatment. I mean, come on, the gameplay might hold up, but from what i've seen, the levels and character models look like pure ass.

A small game I heard about, it's call Stranded II. I guess One could summarize it as Minecraft, but it was a really fascinating game.
Too bad it was buggy and the graphic were veri meh. I'm not picky usually, but I have a threshold where my brain just goes: "okay nope, I don't want to look at that".
I'd love to see the first Hyperdimension Neptunia remade with the budget that its sales numbers showed that it deserved. I mean, really, the entirety of the gameplay could have used some serious cleanup.
Donkey Kong Country, Super Metroid, Call Of Duty: Big Red One (updated to current standards implemented since Call Of Duty 2 for the 360), Halo Combat Evolved wait got that one, Warcraft II, Warcraft Orcs And Humans (both upgraded to at least III's gameplay flexibility, AI, and pathing), and I'm not sure.
Blood, Septerra Core, Shogo, Jazz Jackrabbit, Commander Keen, the first two Zelda games, Metroid II, Metal Gear 1 & 2, Resident Evil 2 & 3, probably more I can't remember right now...

Somehow you know that the time is right.Suikoden III with a budget better than the lint-covered pocket change the developers scrapped together the first time around, and with enough time to deliver all the features that had to be removed.
I'd personally love to see a remake of Secret Of Mana with what's now possible concerning real-time combat and consistent environments. SNES era JRPGs have a particular kind of charm that I think modern ones lack to some extent. They speak so heavily just through the gameplay and music that you could cut a lot of dialogue and still have them work.
Plus, there's no beating their fairy tale charm — something that's becoming rarer and rarer in modern games, and certainly something I'd love to see make a comeback. Certainly there are examples of that kind of tone in modern games, but those instances are rarer than they used to be.
Swordsman Troper — Reclaiming The Blade — WatchSuper Mario RPG redid with 3DS graphics and 3Dness, with the difficulty ramped up a little, and Luigi as a secret character.

Any of the Final Fantasies in the 5-7 range. The first two could do with a 3D, voice acted version and the latter needs and HD remake.
Aside from that a 3D version of The Legend of Zelda A Link to the Past wouldn't hurt. I'd also be interested in seeing HD remakes of Sonic Adventure 1 and 2. They're good games but they've aged terribly.

There must have been a game you have played that you liked very much. A game that would be even better as a remake. A game that hasn't had a remake just yet.
I know some remakes have not happened due to legal issues, lack of interest, too much obscurity, not being profitable enough, and what have you. Still, you shouldn't let all that get in the way of wishing for a remake!
For instance, I would love to see a remake of the very first game of the Dark Forces Saga. I mean, you fight Dark Troopers, Boba Fett and other things. If the advances made in Video Games were applied to a remake of this game, I'm sure it would be awesome!
