I'd say that it's definitely a trope: the character is determined to continue drinking until they forget/remember/pass out, whatever their goal is, and resists all attempts by others (often the bartender, sometimes friends) to get them to stop. That said, I think there's probably a less line-of-dialogue name for it — right now, the description sounds like it's as much about the phrase as it is about the situation.

The character may stop on their own, or be told they need to stop and do so. This is the adamant refusal (sometimes to the point of physical violence or the attempt at it) to stop drinking when they are told they've had too much. It generally follows hot on the heels of Drowning My Sorrows — like Deboss said — a logical extension..
