Actually, the whole mortality of humans thing would seem to depend on when he picks them up from - Liz the tenth is apparantly completely ageless, and I really doubt that technology only ever gets used on her, so there are probably entire eras full of unageing companions for him to pick up. Somewhat moot, tough, as dying of old age seems a highly improbable end for /any/ companion of the doctor. Its not quite as hazardous as being a torchwood employee, but not that far off, either.
