Mostly because in later seasons he both acts like jackass and is treated as the voice of reason. In earlier seasons he both less of a jerk and allowed to be wrong. Strangely the more conservative he became the more often he was correct.

Ruining everything forever.I think they're both great characters. Yes Hank is more annoying when he's right, but it was pulled off much better in the earlier seasons. He's strangely entertaining in his boringness too, then again I'm a big fan of humor of the mundane.
Emperor Wu liked cake, but not exploding cake!I hate everything about Hank Hill. Sometimes because he's just a gigantic twat, and sometimes just because he rubs me the wrong way. Can't really explain that part. It's just the general Hank-Hill-ness of him.
And his voice. It's almost as bad as hearing "Hello, Megan" in every. single. freaking. episode of Young Justice.
I'm not particularly fond of Peggy and Bobby either, mainly because they are dull as a particularly dull bag of rocks. Although that's not a very good example because rocks come in all shapes and sizes, and they can be any color you can think of and have a variety of useful applications. Peggy and Bobby Hill are just dull. They are the standard by which other dull things are measured.
But I LOVE Cotton Hill. Comedic Sociopathy at its finest.

Anyway, I had a sort of opposite effect - Hank's character was the only thing I found occasionally fun about a show I generally disliked.

At times, Hank can be considered a decent character, but then sometimes he ignores weekly life lessons very stubbornly, even if he is aware of it.
The perpetual non-acceptance of Bobby whenever he finds some kind of success doing something Hank is too narrow-minded to consider "good hard work" is a big issue for me. On the other hand, he sometimes genuinely helps Bobby out (or tries to) for the better, such as attempting to teach him to defend himself and even encouraging him in that whole "cross-dressing cheerleader tradition" episode.

Bobby will be distracted from what he is doing by most any old thing, and go about his notions in the stupidest ways imaginable, and I mean stupid for anyone, not just a kid. Frequently, what he does can and does result in social, financial, legal and other troubles for Hank. Even within those escapades, Bobby will adopt his mother's obnoxious habit of believing that reality is something that can be insisted into changing. And while Hank's lack of respect for Bobby's ideas can be annoying, anytime Bobby suddenly decides to show disrespect to Hank, it comes out of left field : The crotch-kicking, the bat phobia-etc.
This is why Hank is so uptight, besides his 'manliness' beliefs. He knows in his heart that while Bobby may be trying to plant a bed of tulips right now, he will be placing spikes in redwoods the next minute; that while say, Pokemon is harmless to most kids, it will cause Bobby to train Lady Bird or another animal for fighting. Hank may in fact be trying to keep Bobby from becoming his grandfather, whose early grand disappointments basically made him the bitter old man he was long before his time. Could Hank stand to loosen up? Sure. But in a world where Bill collecting used popsicle sticks will likely end up causing a war with the next county, Hank's reactions to the mere start of the antics of his friends and family becomes easier to understand.

Usually Hank Hill may be overreacting to what Bobby is doing, but if I ever have someone like Bobby as my son I would pretty much be on edge most of the time because I don't know what stupid thing he'll do next. Bobby seems to be a disappointment in many respects, never having the motivation to do something he could be proud of (except being a comedian) and not exactly having a firm grasp on reality.
He wouldn't let Bill, arguably the show's most troubled character, continue with his psychiatric therapy and counseling. Because Hank wants everything and everyone exactly as they were before, even if they were worse off.

You have a point about therapy and counseling for Bill. But inherent in the potential and promise of such therapy is a desire and willingness to change. Also, a psychologist will be content to nibble around the edges of a problem - not a great strategy with Bill. Now, a lot of this comes from Hank's predjudiced mistrust of anything that seems too modern in its thinking, and likely as was said a desire for the status quo. But if Bill among others is prone to mistake straightforward advice, imagine what they could do with the more open advice offered in therapy.
Hank is leagues away from even pretending he is perfect, but relative to his surroundings, he is easily the Only Sane Man.
