It would have worked... had not Monterey Jack been using Ma's pressure cooker for his special cheese chowder, which ends up attracting a bunch of cops to the diner, forcing the thieves to actually run the diner the whole time.
139** The Rangers don't actually catch on to the fact that the two men are criminals until the final day, instead thinking they're merely bad cooks, and keep making new chowder at night while they're gone, inadvertently foiling their plans.
140** The thieves could still use the nights to dig the tunnel, but they're so tired from honest work all day that they don't have the energy for it.
