It's not a coincidence, we were shown him looking for the spell. It's no surprise that he'd book mark it and Hakon opened it up at that moment. Plus, it's something Word Of God has frequently said wasn't a coincidence anyway because of that.

Goliath volunteers to join his brethren in the curse and moved back to the castle, but not before entrusting the eggs' future to the princess.
