* In the first episode to introduce Reverend Jim in Taxi, Jim asks the other people around him what color his eyes are. It takes a few minutes of looking to decide on a consensus. (Brown.)
* Max's iris in DarkAngel shortened and her pupil grew(At least in the first season) when she used her zoomy-vision powers to look at things far away.

* The most notable example in Manga/DeathNote are Light's eyes; they are red when he thinks about killing others as Kira, otherwise they have a pretty brown color. However, since this is more a benefit for the viewer (and stylistic eye candy), other characters don't notice the change.

* In Creator/DevonMonk's Literature/AllieBeckstrom novel Magic to the Bone, Zayvion has BrownEyes with flecks of gold -- until he leaves the magic grid, whereupon they are brown. When he drives back, his eyes turn pure gold with only flecks of brown.

The closest thing in real life would be Hazel eyes, which change color based on clothing, environment and rarely, yes, even mood.
However there are scientific reasons for this, and the eyes themselves don't actually change, it is instead the perception of whoever is looking at them that has changed, when the light reflected mixes with light reflected off of other parts of the environment, for instance, having a flushed face can make others pervieve your eyes as having darkened, when really they're still the same. However, the eyes actually can change, this is caused by chemical changes that generally happen when one feels an immense emotion such as sorrow, hatred, happiness, etc., this is because eye color is the result of chemical balance in your eyes, emotions can cause the balance to change, thereby also affecting one's eyes.

* WebAnimation/RWBY: The Schnee family butler is called Klein Sieben. His name means 'Little Seven' and is an allusion to the Literature/SnowWhiteAndTheSevenDwarfs. Weiss Schnee, one of the show's main characters, is based on Snow White and Klein puts on little skits with his different personalities to cheer her up whenever she is down. He has seven different personalities, with an eye colour to match each personality. In his first introduction, he has light brown eyes and behaves in a formal, professional manner. When his eyes turn blue, he sneezes a lot in a goofy way. With yellow eyes, he seems overly cheerful and when he has red eyes, his behaviour is grumpy. The eye colours and personalities match the eye colours and personalities of Disney's Seven Dwarfs.
