We can see in RF2 that young male members are also as attractive as the females, and in Oceans we see Beatrix who takes after the patriarchs of the family in terms of appearance. Presumably part of the de Sainte-Coquille family genes is a strong metabolism early in life that causes them to grow up traditionally attractive, and then as they get older their bodies can't catch up to their appetites and they become gonks. I remember in several games the family heads have commented that they used to be attractive in their youth, so I think that it's just a quirk of their families. Presumably when Sofia and Evelynn get a little older they'll start to grow bigger themselves.
